Chucks of grilled chicken or tandoori, cooked in smooth buttery creamy tomato based chicken curry is known as Butter chicken or chicken makhani .
The iconic Butter Chicken was invented in the kitchens of Moti Mahal, Delhi India.
Ingredients of Butter Chicken Recipe
- 500 grams chicken (With bone or Boneless)
- 1 tablespoon refined oil
- 1/2 teaspoon red chilli powder
- 3 tomato (medium size )
- 1 teaspoon coriander seeds
- 1 cinnamon
- 2 and 1/2 green chilli
- 2 clove
- 1 bay leaf
- 250 grams butter
- 2 red chilli
- 1/2 teaspoon coriander powder
- 3/4 teaspoon kasoori methi powder
- 1 teaspoon salt / To taste
- 1 medium size onion
- 2 handful dried fenugreek leaves
- 1 teaspoon onion paste
- 1/2 teaspoon garlic paste
- 1/4 cup yogurt (curd)
- 1 and 1/2 green cardamom
- 1/2 teaspoon ginger paste
- 1/2 teaspoon mace powder
- 1 black cardamom
- 1/4 teaspoon sugar
- 1 and 1/2 tablespoon fresh cream
- 1/2 handful coriander leaves
To Make Butter Chicken Recipe
In a large bowl, mix yogurt, onion paste, green chillies, ginger-garlic paste, sugar, salt, green cardamoms, black cardamoms and mace powder. Add pieces of raw chicken (With bone or boneless) in the bowl and mix well. Allow the chicken to marinate overnight for best result or at list 4 hours. Once the chicken is well marinated, roast it in a tandoor or an oven or you can use fry pan to till its 3/4th done.
Now heat little butter in a pan over moderate flame. Add bay leaves, cloves, cinnamon, red chillies and crushed coriander seeds. Sauté the ingredients for half a minute. Now in the same pan, add a bit of onion, red chilli powder, coriander powder, kasoori methi powder and tomatoes. Sauté them for 5 minutes and once done, transfer the mixture in a blender to make a puree.
Heat the remaining butter in a pan. Add the pureed mixture and bring it to a boil. Add marinated chicken pieces, salt, fresh cream and mix well. To make sure that the consistency is not too thick, add some water to the mixture. Now add sliced green chilies, crushed fenugreek leaves and let it simmer for few minutes. Bring it to a full boil.
Transfer the dish to a serving bowl and garnish it with coriander leaves and cream. This butter chicken recipe is easy-to-make and can be made by using simple ingredients available in the kitchen.If you are fond of spice and love all the spicy things, then add a little more green chillies or black pepper powder and customize this chicken recipe slightly.
